Join Erica as she walks us through a relatively simple recipe for vegan and gluten-free cheesy sauce. This dairy-free sauce can be used in a multitude of ways: on top of veggies, over rice, with a little spice for tacos, or even for vegan mac and cheese!
This Cooking Together class is designed for cooks of all skill levels and includes simple ingredients that many people already have in the pantry. The recipe from which the Cheesy Sauce is adapted is available here.
Note: This recipe calls for cashews, which give the cheesy sauce an incredible texture. If you’re using a regular blender, it’s best to soak the cashews for at least 30 minutes in very hot water. If you prefer, cannellini beans/ white beans can be used instead of cashews.

- 3 sweet potatoes/ 1 cup sweet potatoes, peeled and diced
- 1 whole onion, chopped
- 1 cup veggie broth (saved from cooked vegetables)
- 1/2 cup raw cashews OR 1/2 cup cooked white beans
- 1/4 nutrition yeast flakes
- 1 Tbsp lemon juice
- 1 tsp salt
- 3 garlic cloves or 1/2 tsp garlic powder
- pinch paprika
- 1/2 pinch cayenne pepper
