Healthy, flour-free brownie
Makes 8 brownies
1 cup mashed sweet potatoes
2 teaspoons baking soda
1/4 cup maple syrup
1/2 cup almond, sunflower, peanut or cashew butter
1/4 cup cacao or cocoa powder
1 Tablespoon vinegar (and kind)
Note: For fudgier brownies, omit the baking soda and vinegar.
Preheat over to 350 degrees.
Peel, dice and steam or boil sweet potatoes until soft and tender.
Mix everything well together, in the order listed, one ingredient at a time, incorporating each as you go.
Press mixture into a bread or cake pan, and bake at 350 degrees for 40-45 minutes, until edges are a bit crispy and center is dry.
Cool and remove from pan.
