February 10th – 16th is Vegan Week at Diamond Club inside Embassy Suites by Hilton (86 Congress Street, Saratoga) where Chef Matt created a special all-vegan menu! In addition, our friends at Embassy Suites have decided to donate 10% of the proceeds to us at Capital Region Vegan Network. We chatted with Rebekah, Director of Sales and Marketing, to understand a little more about how this all-vegan and very delicious week came about.
Q: We’re so thrilled to learn that you’ll be offering a vegan week! Can you tell us what prompted you to dedicate a whole week to a special vegan menu?
A: We are always looking for new ways to reach our community and have been very lucky to be able to create a “Local’s Spot” in The Diamond Club Restaurant and we wanted to try something new for other guests that maybe we just weren’t reaching. At first we started with one night of specials but then thought we could reach more people if we set it up like a restaurant week menu. Whether you are already Vegan and want to try a new restaurant or maybe you just want to try a different type of diet, this menu offers a great opportunity to do so at a very reasonable cost.
Q: What are some of the menu items you’re most excited about?
The Curried Carrot Soup is the most exciting for me. I love soup! I don’t care what season it is, I just love soup. There is something so hygge and comforting about it.
Q: Thank you so much for giving back to CRVN! What inspired you to give back to a local vegan nonprofit?
I am a firm believer that anytime you have an opportunity to give back, you should do it. Even if all you have to give is small, it’s worth it. This is a topic that I am very passionate about and I am grateful to be able to work for a property that allows me to put something like this together for our community.
Q: Is there anything else you’d like us to know about vegan week or your plans going forward?
I have been a vegetarian for a few years now and have been making the switch to Vegan over the past year (I am very proud to be going strong with Veganuary!). I really feel that there is a need for something like this in Saratoga that could ultimately grow to an even bigger thing down the road and luckily Chef and the rest of the team here has agreed! Our hope would be to get more restaurants involved in the future along with local produce farmers to really make a bigger impact!
